When I enter the variable %AppData% in the "Log file output path" in EuekaLog Options form the log is not created in the \Documents and Settings\{UserName}\Application... folder. The EurkaLog is being created in the application startup path and then it creates a new folder under that named "%AppData%". It is treating that as a literal instead of a variable.

we are working on this bug and I hope to can release a fixed version into the next Wednesday!

bug just fixed in the last released 6.5.1 stable! :)

The problem is that the variables are converted to actual locations when you save the EurekaLog options
When you go back into the option you see absolute locations like C:\Users\Martin\
This is not useful if you deploy the program to another person's computer
The variable name should be saved and resolved only at runtime

The next release is here, and has a lot of bug fixes and improvements. One of those is the log file path fix you've been eagerly waiting. :)
